Today is my birthday! It seemed like a perfect day to try and make a Paleo Mug Cake. If you google Paleo Mug Cake you will get lots of hits. I read through a few recipes and then decided to make my own. It’s good. It will be spectacular with a small (very small) scoop of full fat, vanilla ice cream. If you’re going to have a treat once in a while it should be a really good treat.
I was trying to make this chocolate mug cake without any added sweetener. That version was o.k., again, I’m sure it would be awesome with some ice cream. The final version of this recipe has raw honey. The honey really added to the flavor. It was worth adding.
Ingredients:
- 1 ripe banana
- 1 1/2 tablespoons coconut flour
- 1 1/2 tablespoons almond flour
- 2 tablespoons coconut oil (melted)
- 2 tablespoons organic coco powder
- 2 tablespoons raw honey (melted)
- 1 egg
- 1/2 teaspoon vanilla extract
- salt to taste
- cinnamon to taste
- chopped walnuts
- chopped organic dark chocolate or chocolate chips
What I Did:
First, I mashed the banana in a bowl with a fork. I then added all wet ingredients to the banana (coconut oil, honey, egg, vanilla) and mixed it all up really well. I then added the dry ingredients to the banana mixture and mixed that up really well. Once it was all combined and looking like batter I added some chopped walnuts and some chopped organic dark chocolate. I poured the batter into a little ramekin 2/3rds of the way full and then microwaved it for about 2 1/2 minutes on high.
After my little cake came out of the microwave I sprinkled a bit of chopped chocolate and walnuts on the top. TaDah, done.
The “cake” was a bit of a cross between cake and a brownie. Really tasty with a nice consistency. If you like coconut, some shredded coconut would make a nice addition to the batter. Yum.
The batter was enough for three little Paleo Mug Cakes. Perfect for a quick dessert when friends are over or for hungry kids looking for a snack.
