Molten Chocolate Cake

I have no pictures! It was one of those spur of the moment things. The good news is, I got this recipe from ThePaleoMom you can see a great picture over at her site. My cakes  looked exactly like her picture.

So, we were watching the Super Bowl. We had just finished dinner and my son asked me if we had dessert. My first thought was, who are you!? Do we have dessert? Please. We NEVER have dessert. Did he just move in? My second thought was, he never asks for dessert and boy would I  love to wow him with a dessert.

The problem, when you are looking for dessert generally you want it NOW. What could I “wow” him with that I could whip up in minutes and did I even have ingredients for dessert? Well, the first thing that pops into my head when I think dessert is chocolate. The second thing is Molten Chocolate Cake. By all appearances not a dessert that can be whipped up in minutes. But WAIT! I was recalling a molten chocolate cake recipe that I saw that did whip up quickly. Thank you PaleoMom!

Sure enough, ThePaleoMom had recently posted a recipe for Molten Lava Chocolate Cake. It’s so easy. Hardly any ingredients and as long as you have chocolate chips in the house you will more than likely have all the ingredients on hand. All you need is chocolate chips, vanilla, salt, sugar, coconut flour, cocoa powder, eggs and coconut oil. The biggest ingredient is Chocolate Chips. The whole cake is pretty much chocolate. It taste that way too – yum.

I was a little concerned about the sugar but the batter is enough for four 60z. ramekins so each serving only has about a teaspoon and a half of sugar. I’m happy to report that I had no sugar side effects. I did not feel the need to go back for seconds (although I did eat the extra one for breakfast).

Final thoughts…

Delicious, super fast and easy. This is a perfect spur of the moment dessert. My son’s only suggestion would be to add a bit of Vanilla Ice Cream on top. I have to agree that would be spectacular. I also think adding some chopped walnuts would be good.

I believe I told my husband that the next time we have company for dinner I’m going to whip these up for dessert. He suggested that I put a folder together of all the recipes I think are worthy of company. I just might do that. It would certainly help cut down on the panic of what to serve guests.
