Taco Salad
We often have taco salad. It’s a quick, easy dinner. We have it so often that I’m kind of tired of it. I do love all the yummy flavors of tacos and taco salad but I was bored. Solution, Keto Taco Pie Casserole. I had been seeing recipes for taco pie. They looked interesting, easy to make low carb but they looked small. I would consider my family BIG eaters. A normal pie size is too small for an entree for my family.
Taco Pie Casserole
What’s bigger than a pie plate, a casserole dish. Specifically, a lasagna pan! Why make a pie when I could make a layered taco casserole? The beast was born! I can’t wait for my son to visit, he is going to LOVE this. You can do anything you want with this. I’ll give you my version but add what you like. If you want to keep it low-carb/keto then you’ll probably have to make your own tortillas or just leave them out.

This is a hearty meal. I was very liberal with the cheese. Do what works for you : )
Keto Taco Pie Casserole - 6 net Carbs
Notes
I cut my Taco Pie Casserole into 8 big pieces. The nutritional information for this recipe is for 10 pieces. I think 10 pieces is a more realistic serving size for most people.
Each piece is 6 net carbs.
I served this over salad greens.
The tortillas are optional. You can leave them out. You could also make them and then just serve them with the pie and let people make their own tacos.
Nutritional information without tortillas: Net carbs 4, Total Carbs 7, 2 Fibers, 42 Fat, 36 Protein, 544 calories.
Ingredients
- I TBSP Coconut Oil
- 3 lbs. Grass-Fed Ground Beef, 15% fat
- 2 cups Chopped Onion (270 grams)
- 2 large Tomatoes, thinly sliced (185 grams)
- 4 cups, Shredded Mexican Cheese Blend
- 1/4 cup, Sliced Pickle Jalapeno Peppers (90 grams) - I used jarred
- 10 oz. of Gucamole
- Taco Seasoning (see ingredients in post)
- 1/2 cup Bone Broth (optional)
- Low-Carb Tortillas (see recipe in post) (optional)
Instructions
- Heat coconut oil in large skillet of medium-high heat
- Sauté chopped onions until translucent, about 3-5 minutes.
- Add ground beef to onions, breaking it up as you add it to the skillet
- Mix with onions and cook until no longer pink, breaking up the meat and stirring while it cooks
- Add 4 tablespoons of taco seasoning (more or less to your taste)
- Add 1/2 cup of bone broth, mix into meat and let simmer on low until broth just about gone.
- Turn off heat and let meat sit in skillet until you add it to the casserole
- If making/using the tortillas, try to cook them in the shape of the casserole dish.
- Layer the bottom of casserole with 1/2 the tortillas - should make a single layer. May not totally cover the bottom, that's fine.
- Add a sprinkle of cheese
- Add a layer of taco meat
- Add a layer of sliced jalapenos
- Add a layer of cheese
- Add a layer of sliced tomato
- Add a layer of guacamole (this is hard to spread so do the best you can, I just slathered on the tomatoes and spread as best I could)
- Add a layer of tortillas
- Add a layer of taco meat (should use up all the taco meat)
- Add the remainder of the cheese
- Bake at 375 for 10 minutes or until the cheese is melted to your liking.
- I add a few minutes under the broiler to brown the cheese on top.

It’s getting chiller outside and hearty casseroles really hit the spot. I hope you like this version of low-carb tacos. This Keto Taco Pie Casserole is even better a day or two later.
