Beef Stew
Looks like a bunch of you took advantage of Amazon Prime Day and bought the Instant-Pot 7-in-1 Electronic Pressure Cooker. Awesome! A couple of you have asked for my beef stew recipe. Here ya go…
Ingredients:
- 3 lbs. beef stew meat
- 1 medium – large onion, chopped
- 2-3 carrots cut into chunks or thick slices
- 6 celery stalks cut into thick slices
- 8 oz. of sliced mushrooms
- 5 garlic cloves, sliced (more or less to your liking)
- 2 tbsp. organic flax meal (as a thickener)
- 1/2 cup of bone broth (or organic beef stock)
- 1/4 – 1/2 cup red wine
- Salt & Pepper to taste
Method:
- Turn Instant-Pot on to Saute.
- Throw the meat in while you are cutting up the veggies and getting the rest of the ingredients ready.
- Salt and pepper the meat
- Give the meat a stir every few minutes
- Add the sliced and chopped veggies
- Add the bone broth
- Add the red wine
- Add the flax meal and mix it all up
- Add whatever else you want…
Turn Instant-pot off and put the lid on and set to the top nozzle to pressure.
Turn pot back on, hit “manual” button. Now set timer for 1 hour and let the ingredients turn into yummy goodness! You can cook longer than 1 hour but an hour should do it. The meat is super tender.
You can throw whatever you want in, whatever veggies you like in whatever amounts you like. Adjust the amount of meat for the amount of people you are feeding. I used 3 lbs. of beef for 5 people, there were no left overs : (
The picture to the right is the stew all done. It’s even better the next day. It was so disappointing not to have left overs.
