Low-Carb Pancakes
That’s right, cream cheese pancakes are low-carb with the added bonus of having healthy fat from both the eggs and cream cheese. These pancakes aren’t exactly like normal, flour based pancakes. For one thing, they won’t give you a stomach ache, yay. They are more like a crepe than a pancake. Thin and not heavy.
If you are getting sick of having bacon and eggs for breakfast (hard to believe but it does happen), these pancakes are an easy and quick alternative.
- 2 Eggs
- 2.5 oz. of Cream Cheese
- 1/2 tsp. Cinnamon or Spice of your choice
- 1/8 - 1/2 Sugar-free Sweetener (optional, adjust amount to your taste)
- Pinch of Salt (optional)
- Put the eggs, cream cheese, spices, sweetener and pinch of salt into a small food processor, blender or bowl and mix until well combined.
- Check for cream cheese chunks, they tend to hide in the batter
- Continue to mix until the cream cheese is well blended
- If using a blender or food processor let the batter sit for a few minutes so the bubbles can settle
- Heat a medium size pan over medium-high heat, I tend to use a non-stick for this.
- Add butter or fat of choice to the pan so the pancakes don't stick. I don't tend to need the fat if I use my non-stick pan.
- Pour the batter into a measuring cup that has a spout.
- Using the measuring cup, pour the batter onto the hot pan. I can usually fit 3 smallish pancakes in my 10" pan at one time.
- Let the pancakes sit on the hot pan until bubbles start to appear 30 seconds to 1 minute, flip the pancakes and let cook for another 30 seconds.
- Remove from pan and place pancakes on a plate.
- Continue until all the batter is gone.
- Spice Mix I used: Primal Palate Apple Pie Spice
- Sweetener I used: Pinch of Organic Stevia Extract Powder from Trader Joe's
- After the first batch of pancakes I tend to turn the stove down to medium, maybe even medium-low heat so I don't burn the pancakes.
- These are really good rolled and eaten with your fingers. I usually just butter them but you can make a berry sauce to go on them. You could also just use some homemade whipped cream and berries. There are also sugar-free syrups that would be tasty.
Fast and Easy
These pancakes really are fast and easy. When I first came across a recipe for cream cheese pancakes I believe it said serves 4. This recipe is definiately a single serving recipe. The pancakes are so light you’ll be able to gobble them up in seconds. If you are making these for a crowd make sure and multiply the recipe by the number of people. Throw in a side of bacon or sausage to complete the meal.
1 serving: 379 calories, 33 g fat, 3 g carbs, 0 fiber, 17 g protein.
Experiment
When I recently made these pancakes I used Primal Palate Apple Pie Spice and just a pinch of Organic Stevia Extract powder from Trader Joe’s.
Experiment with spices. If you’re going to use a spice mix make sure and read the ingredients. Watch out for sugar. There’s really no need to have sugar as part of the ingredients in a good spice mix.
Pastry Treat
If you are feeling like you want an extra special treat or maybe you’re having guests and want something a little different try creating a breakfast pastry by adding some cream cheese fluff to the pancakes.
