Sugar-Free LowCarb Dessert Fluff
I am reposting this Dessert Fluff recipe. This is a favorite of mine and from what I can see from Pinterest, a favorite of many. I posted this a while ago and want to reintroduce it incase you may have missed it buried in my blog. It is low-carb, high-fat which makes it a perfect treat both a low-carb and ketogenic lifestyle. I’ll talk more about alternative sweeteners in my next post but for now enjoy this sugar-free, delicious dessert.
Cream Cheese Fluff
One of my go to desserts. It’s super fast, easy and fun to make. I love to make this because I love watching it turn from nothing into something. It’s rich, creamy and just sweet enough to satisfy a dessert craving. This amazing concoction came to me by way of DJ Foodie and his Taking Out The Carbage cookbook.
Unlike normal, high sugar desserts, this cream cheese fluff will not spike insulin or disrupt blood sugar levels. The fluff is sweet but I use an alternative sweetener instead of sugar. My favorite go-to alternative sweetener is Swerve Confectioner’s sweetener which is made with Erythritol, a sugar alcohol.
Erythritol
Unlike other sugar alcohols such as xylitol, mannitol, and sorbitol, erythritol is 90% absorbed in the small intestine and excreted in the urine. This cuts way down on the gastrointestinal upset often associated with other sugar alcohols. Xylitol, mannitol and sorbitol are all absorbed in the colon which can cause gassy trouble among other things if one over indulges. Favorite Way to Enjoy Fluff
My favorite way to enjoy this fluff is with frozen blueberries, heated so they are mushy with a nice sauce. I typically like fresh berries but for this the frozen really work. When the frozen berries are heated they melt and create a natural syrup. When you put 1-2 tablespoons of the berries and sauce on the fluff you get a light, fluffy blueberry cheesecake like filling. So good!!!
This is a rich and creamy dessert, a little goes a long way. Eat it slowly and savor all the creamy deliciousness.
Brunch Idea
Here’s a fun brunch or anytime idea. Make cream cheese pancakes, spread some fluff in the center of each pancake and then roll. You’ll end up with a really sweet, pastry like treat. I need to make these pancake roll-ups again. I made them for a brunch and they disappeared so quickly I didn’t get a photo.
Kitchen Gadgetry
You really need some kind of a mixer for this recipe. I use a Kitchen Aid standing mixer (love, love, love this mixer and use it for everything) but you could definitely use a hand held mixer. If you’ve ever made whipped cream using heavy whipping cream you’ll know what I mean. The fluff is basically heavy duty whipped cream.
Notes
The nutritional information is for 6 servings. I evenly distribute the fluff into 6 small bowls which I cover and keep in the fridge. If we have company there are never leftovers.

Ingredients
- 8 oz. Cream Cheese (room temperature)
- 1 tsp. Pure Vanilla Extract
- 1/4 Cup Swerve Confectioner's Sweetener
- 1/4 tsp. Organic Pure Stevia Leaf Extract Powder (Trader Joe's)
- pinch of salt
- 1/2 Cup Heavy Whipping Cream
- Optional: 1-2 tablespoons heated Frozen Blueberries & Juice
Instructions
- Put the room temperature cream cheese into large mixing bowl, mix on low and add the vanilla, salt and sweeteners. Continue to mix until well combined. Stop mixer and scrape sides and bottom of bowl making sure no cream cheese is left behind.
- Turn mixer up to medium-high and in a steady, narrow stream, slowly add the heavy whipping cream. Continue to mix until the ingredients turn into a thick whipped cream, "fluff". When you turn the mixer off the cream should had sturdy peaks.
- Don't over mix or it could turn to mush. Also delicious and great as a sauce for a fruit salad or even pancakes but not really fluff.
- If you want to add the optional blueberry topping, add organic, frozen blueberries to a small pot and over low-medium heat warm the blueberries until hot and saucy (a few minutes). You can also do this in the microwave, high heat for about 2 minutes.
